Lebanese Parsley Bites Print Ingredients(Serves 4): Dough 1 cup bulgur wheat, drained 1 cup fresh mint leaves, chopped ½ cup pine nuts 2 tbsp tomato paste 2 tbsp olive oil 2 tbsp lemon juice 2 tsp each of black pepper and cumin, ground 1 tsp cayenne pepper 1 tsp paprika Salt, to taste Lebanese 7 Spice: 4 tbsp black pepper 4 tbsp cumin ½ cup paprika 2 tbsp ground coriander 2 tbsp cloves 2 cinnamon 2 cardamom Stuffing 1 cup parsley, chopped ½ cup mixed red, yellow and green bell-peppers, chopped 2 tbsp red chilli powder 2 tbsp cottage cheese (paneer), grated Salt and pepper to taste Method Grind ingredients of Lebanese 7 spice. Mix ingredients of dough in a food processor until smooth. Keep aside for an hour at room temperature. Separately mix ingredients of stuffing. Add 3 tbsp of Lebanese 7 spice mixture. Roll the dough in small shapes and fill with one tablespoon of stuffing. Place them on baking sheet. Preheat oven to 176°C. Bake them for fifteen minutes, until golden brown and crispy. Serve the bites with tahini.
